For thousands of years, humans didn't have nutrition labels, calorie trackers, probiotic supplements, or wellness trends telling them what they should eat. They worked with the foods available to them - preserving vegetables through fermentation, transforming grains, culturing milk, drying and soaking foods, and developing ways of preparing ingredients that made them practical, flavorful, and nourishing.

Some of those traditional foods have very distinctive characteristics. They're tangy. Sour. Earthy. Sharp. Complex. Sometimes even bitter. And many of those flavors have become less common in modern Western diets, where sweetness, saltiness, and highly processed foods tend to dominate the palate. That doesn't mean traditional foods are automatically healthier, or that everything modern is bad. But it does raise an interesting question:
What happens when we make room for more diversity - not just in the nutrients we eat, but in the flavors, textures, ingredients, and ways we prepare our food? Two especially interesting examples are fermented foods and bitter foods.

Fermentation was therefore not one single invention that happened in one place.

Fermentation changes more than just flavor: The connection to your gut microbiome
During fermentation, microorganisms such as bacteria, yeasts, and fungi break down components of food and produce compounds such as organic acids, gases, and other metabolites.
That transformation can alter the nutritional characteristics of the original food.
Depending on the food and the type of fermentation, this process may help break down certain carbohydrates or proteins, reduce some naturally occurring antinutritional compounds, and make particular nutrients more available for the body to use. For some people, fermented foods may also be easier to tolerate than their unfermented counterparts.
Take yogurt, for example. The fermentation of milk by specific bacterial cultures changes lactose into lactic acid. This is one reason some people who have difficulty digesting lactose may tolerate yogurt better than milk. Fermentation isn't magic - it's biology. And that's what makes it so interesting.
One of the biggest reasons fermented foods have entered modern nutrition conversations is their relationship with the gut microbiome.
Your digestive tract is home to trillions of microorganisms that interact with the food you eat, the environment inside your gut, and the rest of your body. This is one reason the details matter. Instead of asking, "Is this fermented?" a better question is: What was fermented, how was it fermented, and what remains in the food by the time I eat it?
The goal doesn't need to be finding the one fermented food that will transform your gut health. In fact, that mindset misses one of the most interesting things about nutrition: your body responds to patterns, not isolated foods.
Different fermented foods involve different microorganisms and different fermentation processes. Yogurt isn't the same as kimchi. Miso isn't the same as kefir. Tempeh isn't the same as sauerkraut.

How to Actually Eat More Fermented Foods
So, what actually counts as a fermented food? At its simplest, fermented food is food that has been transformed by microorganisms such as bacteria, yeasts, or fungi. During fermentation, these microorganisms break down components of the food and create new flavors, aromas, textures, and compounds. That means fermented foods can look very different from one another.
You might find them in the dairy aisle, the refrigerated vegetable section, the international aisle, the bread section, or even sitting in your pantry.
And you probably already eat some of them.
Your grocery list, but with a fermented-food lens
If you want to start incorporating more fermented foods into your diet, you don't need to search for obscure ingredients or completely change the way you cook. You don't need all of them. Pick one or two that sound genuinely good to you. That's enough to begin. Start by looking for a few familiar foods:

If you're interested in fermented foods specifically because of the microorganisms they may contain, read the label. Not every product that started out as a fermented food still contains live microorganisms by the time it reaches your plate.
Look for language such as "live cultures" or "active cultures" when that's something you're specifically looking for.

Some products are pasteurized or heat-treated after fermentation, which can change the microbial content. This is particularly important with products like sauerkraut, pickles, and other fermented vegetables. And remember: a product doesn't have to be expensive, exotic, or marketed as a "gut health" food to be worthwhile.
Start with one meal
Here's an easy challenge: Choose one meal you already eat every day and find one way to introduce a fermented food.
Breakfast might become yogurt with berries. Lunch might become a turkey sandwich with sauerkraut. Your afternoon snack might become kefir and fruit. Dinner might become a rice bowl with vegetables, tempeh, and a miso dressing. You could do this a few times a week without changing the rest of your diet at all. Over time, you may naturally start experimenting with other foods and flavors.
Fermented foods aren't supposed to be a test of how "healthy" you can be. Some are sour. Some are salty. Some are earthy, tangy, spicy, or funky. You might love kimchi and hate kefir. You might discover that you enjoy miso but aren't a fan of sauerkraut. That's completely fine.
The goal isn't to learn to like every fermented food. It's to expand your options. Try different foods. Try them in different recipes. Start with small amounts. It's the one you can actually see yourself doing next Tuesday.

And sourdough reflects another ancient relationship between humans, grains, wild yeasts, and bacteria. Long before commercial baker's yeast existed, naturally occurring microorganisms could help ferment dough and contribute to its rise, flavor, and texture.
Fermentation helped transform perishable foods into something new
One of the fascinating things about fermentation is that preservation wasn't the only outcome. Fermentation can fundamentally change the food itself. Milk becomes yogurt or kefir. Cabbage becomes sauerkraut or kimchi.

But modern science doesn't make the ancient tradition any less remarkable. If anything, it gives us a deeper appreciation for what people figured out through observation long before they had microscopes or nutrition labels. That's what makes fermentation so fascinating.
It sits at the intersection of food, biology, culture, preservation, and human history - and we're still learning about the many ways those things connect.

Rediscovering the Bitter Side of Food
There is something interesting about bitterness: we've become very good at avoiding it. Much of modern food culture is built around making food immediately appealing. Sweet, salty, creamy, rich, and highly flavored foods are everywhere - and many packaged foods are specifically formulated to make us want another bite. When we become comfortable with a wider range of flavors, we may become less dependent on foods being intensely sweet, salty, or rich in order to feel satisfying. A meal can be earthy, spicy, tangy, bitter, crunchy, fresh, savory, or a combination of all of them.
Food Awareness
That variety makes eating more interesting - and it can make healthy food feel less like something we're supposed to eat and more like something we genuinely want to eat.
This is where food awareness comes in. Instead of automatically reaching for the strongest or most familiar flavor, we start noticing what we're actually tasting.
What is bitter? What is sweet? What is acidic? What textures do I enjoy? What combinations make this vegetable taste completely different? That curiosity can be a surprisingly powerful part of developing a healthier relationship with food.
If fermented or bitter foods aren't a regular part of your diet, you don't need to overhaul everything overnight. Choose one new food and experiment with it. Try adding a spoonful of sauerkraut to lunch. Put a handful of arugula into your usual salad. Try plain yogurt instead of a highly sweetened option. Roast some radicchio with olive oil and lemon.

You may not love everything - and that's okay. Our tastes can change with exposure, and learning to enjoy a wider range of flavors can make healthy eating feel less repetitive and more interesting. Fermented and bitter foods aren't magic ingredients, and they don't replace the fundamentals of good nutrition. But they can help us think differently about what a healthy diet looks like.
More variety. More whole foods. More plants. More traditional foods. More curiosity.
